I love apples and anything that has to do with apples. I love applesauce, apple pie, caramel apples, candy apples, apple slices, apples and cheese, apple turnovers….well, you get the the idea. This awesome apple crisp is one of the best I’ve had in a long time. (P.S. If you’re not an apple lover like me, but enjoy yourself some peaches, then you can substitute peaches for the apples and make an Awesome Peach Crisp.) Enjoy this amazing comfort food.

Prep Time: 25 Minutes

Cook Time: 1 Hour

Total Time: 1 Hour and 25 Minutes

Serves: 10

 

Ingredients:

5 Cups Tart Apples, peeled, cored, and sliced

2 Tbsp. Lemon Juice

2/3 Cup Sugar

3 Tbsp. Flour

1 Tsp. Cinnamon

1-1/2 Cups Brown Sugar

1 Cup Butter, melted

1-3/4 Cups Flour

2 Cups Quick Oats

Step 1: Preheat the oven to 350 degrees F. Place the sliced apples in a 13×9-inch baking dish and sprinkle with lemon juice. In a small bowl, mix together 2/3 cup sugar, 3 tbsp. flour and cinnamon. Sprinkle over apples.

Step 2: In a large bowl, mix together the remaining ingredients until crumbly. Sprinkle over the apples in the baking dish, pressing down to work crumb mixture into the apples. (Dish will be very full.) Bake 350 degrees for 50-60 minutes or until apples are tender, mixture is bubbling, and the topping is browned. Let cool for at least 30 minutes before serving. Serve warm with ice cream.

Syrniki (or Sweet Fried Cheese Fritters/Pancakes)

Syrniki originated in Russia as a sweet fried cheese fritter or pancake that is garnished with various toppings to add to its sweetness. I like to think of it as Russia’s version of the crepe mixed with American pancakes. Hope you enjoy it as much as I did!!



Prep Time: 10 minutes

Cook Time: 30-40 minutes

Servings: 8-10

Ingredients

1 Cup Cottage/Ricotta Cheese

4 Tablespoons Flour

1 Egg

3 Tablespoons Sugar

1/2 Teaspoon Vanilla

Dash of Salt

Sour Cream, Fruit Jam, Apple Sauce, or Honey as garnish (recommended)

Vegetable Oil

 

Step 1: First, begin by preheating a medium size skillet on medium-high heat with 1 tablespoon of oil.

Step 2: Using a large bowl, beat the eggs and then add the cottage/ricotta cheese, vanilla, flour, sugar, and salt. Mix well until it looks similar to pancake batter. Make sure it’s not too thick, though.

Step 3: Ladle a generous amount of batter (about the size of a silver dollar pancake, or 3 inches in diameter) into the greased skillet and cook for about 2 minutes per side, or until light golden brown.

Step 4: Serve on a plate and enjoy with a garnish of sour cream, fruit jam, applesauce, or honey.

Tips: These are best eaten while hot.

Prep Time: 15 minutes

Cook Time: 18 minutes

Servings: 12

 

Ingredients

1 & 3/4 Cups All-Purpose Organic Flour

1 & 1/4 Teaspoon Baking Powder

1/2 Teaspoon Kosher Salt

1/2 Teaspoon Nutmeg

1/4 Teaspoon Cinnamon

1/3 Cup Melted, Unsalted Organic Butter

3/4 Cup Organic Sugar

1 Large Organic Egg, at Room Temperature

3/4 Cup Milk

FOR COATING:

1/2 Cup Unsalted, Organic Butter, Melted

3/4 Cup Organic Sugar

1 Teaspoon Cinnamon

Step 1: Preheat convection oven to 350 degrees F. Line 12 muffin cups with muffin liners.

Step 2: Mix all the dry ingredients (flour through cinnamon). Set aside.

Step 3: Mix all the wet ingredients (butter through milk, including sugar).

Step 4: Add wet ingredients to dry ingredients and stir until just combined.

Step 5: Distribute the batter evenly among the 12 muffin cups.

Step 6: Bake for 18-22 minutes.

Step 7: In the meantime, mix sugar and cinnamon for the coating.

Step 8: Brush fresh and still hot baked muffins with melted butter and roll in sugar-cinnamon mixture.

Step 9: Let cool.

Tips: Muffins taste best the same day they are cooked.
